Salad:
1 bag spinach
1 box orzo pasta
½ cup finely chopped red cabbage
3-4 fresh tomatoes
2 Tbs. chopped sun dried tomatoes
1 can sliced black olives
½ bottle capers
Pine nuts
Grated parmesan cheese
Dressing:
Blend together:
1 clove garlic
1 ½ Tbs. Dijon mustard
1/3 c. garlic rice vinegar
½ c. oil
½ c. fresh lemon juice
2 ½ tsp. sugar
Salt & Pepper
